100g plain flour
50g corn flour
50g granulated sugar
100g butter
Pinch of salt
Grated zest of 1 lemon
Mix the ingredients together by hand or with a food processor.
Roll the dough into a cylindrical shape and cover with cling film.
Place in the fridge for about 30 mins to chill and firm.
Remove from the fridge and slice into 1cm thick biscuits as shown.

Preheat oven to 160 degrees
Lay the biscuits onto a greased baking tray and place in the oven for 15-20 mins
Remove from the oven and allow to cool (if you can wait!)
Yum!
Tip..
Make up double the quanitity and freeze half for baking another day.
Oh they look divine! I will have a go, I had some pretty cookie cutters as a birthday gift a few months ago and they make biscuit shapes that perch on the edge of the cup! Sounds like a perfect time to try them out!!!
